Dishes that recall change – Porridge
For me, this porridge reminds me of times of change.
When I moved to London, my kitchen goddess Ana (who is also part of Ormã), prepared me this delicious porridge.
Since then, porridge began to be part of my comforting moments of healthy healthy indulgence.
Who else has memories of dishes that recall change?
(makes 1 serving)
1 small apple
1 tbs almonds (or walnuts)Preheat the oven to 180ºC.
Bake for 30-40 minutes or until cooked.
For the porridge:
1 handful of oat flakes
1 cup of plant-based milk
Place a handful of oat flakes in a bowl and cover with water. Soak overnight.
The next morning, put the oats and water in a small pot, add a pinch of salt, the orange peel, and cinnamon.
Cook over medium heat, gradually adding the milk and stirring constantly, as if it were a risotto. As the milk is absorbed, keep adding more until the oats are cooked and have a creamy texture.
When you’re are satisfied with the consistency remove the orange peel from the porridge.
Serve it in a bowl with the apple and optionally with a drizzle of a sweetener on top (e.g. agave or date syrup).
